Quick Meals on Student Budgets

Easy, Cheap Recipes You Can Make in a Pinch

If you’re anything like us, the thought of cooking is just exhausting. Let’s face it, this is a busy era we live in, and taking the time to shop for, prep, and wash up after a meal sometimes seems like a monumental task. But here’s the thing…eating at home can literally save you hundreds of dollars a month—which is quite a bit, if you’re on the typical student budget! And let’s face it, who doesn’t get tired of dining hall food after a while?

With that in mind, we’ve compiled a list of some of our favorite quick, easy, cheap meals even the most culinarily-challenged apartment-dweller can tackle. Invite some friends over to turn it into a dinner party, or stretch your dollar further and freeze the leftovers for quick, microwaveable meals-on-the-go (particularly helpful once the insanity of school starts back up).

  • Tomato and Spinach Pasta
This recipe is incredibly simple and fast. It’s perfect for those nights when all you want to do is flop on the couch and binge-watch some Netflix. https://www.budgetbytes.com/2013/07/creamy-tomato-spinach-pasta
  • One Pot Burrito Bowls
Forget Chipotle. Save money with this ridiculously easy, tasty burrito bowl. We love one-pot recipes like this, because they save tons of time on clean up (doing dishes is the worst), and they’re easily customizable to suit your particular tastes.

  • Avocado Greek Salad
This one is perfect for this hot summer, as it doesn’t require an oven or stove. Throw in some pre-cooked chicken or shrimp for added protein, and voila! Healthy delicious dinner in under 30 minutes.

  • Crock Pot Salsa Verde Chicken
I cannot say enough about how much I love crock pots. They’re a godsend for those days when you don’t have the time or energy to slave away in the kitchen. Just dump the ingredients in, turn the thing on, and go about your day. You’ll come home to an apartment that smells amazing with dinner ready to eat.

  • Shakshuka
Expand your horizons with this traditional Middle Eastern/North African dish. One pot, a poached egg, and a handful of ingredients results in a flavorful dish that pairs perfectly with your favorite crusty bread.
